8 oz elbow macaroni

2 cups shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

1 cup whole milk

½ cup beer (lager or ale)

4 tablespoons unsalted butter

¼ cup all-purpose flour

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

1 lb sirloin steak, cut into bite-sized pieces

2 tablespoons olive oil

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional)

Fresh chives, chopped (for garnish)

Instructions
 

Cook the macaroni according to package instructions until al dente. Drain and set aside.

    In a large skillet, heat the olive oil over medium-high heat. Season the steak bites with smoked paprika, cayenne pepper, salt, and pepper. Cook the steak bites for about 3-4 minutes, until browned and cooked to your desired doneness. Remove from the skillet and set aside on a plate.

      In the same skillet, melt the butter over medium heat. Whisk in the flour and stir constantly for about 2 minutes until it forms a thick paste (roux).

        Gradually whisk in the milk and beer, continuing to stir until the mixture is smooth and begins to thicken (about 5 minutes).

          Add the garlic powder, onion powder, salt, and pepper. Stir until fully combined.

            Reduce the heat to low and add the shredded cheddar and Gruyère cheeses. Stir until the cheese is completely melted and the sauce is creamy.

              Mix the cooked macaroni into the cheese sauce, stirring until thoroughly coated.

                Fold in the cooked steak bites to incorporate them into the mac and cheese.

                  Taste and adjust seasoning as needed.

                    Serve immediately, garnished with chopped chives on top for a fresh finish.
