1 pound beef sirloin, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups beef broth

1 tablespoon Worcestershire sauce

2 tablespoons soy sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Heat the olive oil in a large skillet or saucepan over medium-high heat.

Add the beef cubes to the skillet and season with salt and pepper. Sear the beef for about 5-7 minutes until browned on all sides.

Remove the beef from the skillet and set aside. In the same skillet, add the chopped onion and sauté for 3-4 minutes until softened.

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Return the beef to the skillet and add the beef broth, Worcestershire sauce, soy sauce, dried thyme, and dried rosemary. Stir to combine.

Bring the mixture to a gentle simmer, cover, and let it cook for 30 minutes.

After 30 minutes, remove the lid and stir in the cornstarch slurry. Allow the gravy to thicken while simmering for another 5-10 minutes.

Adjust seasoning with salt and pepper if needed.

Serve the beef tips hot, garnished with fresh parsley.
