1.5 lbs beef sirloin or tenderloin, cut into bite-sized cubes

2 tablespoons olive oil

1 onion, finely chopped

3 cloves garlic, minced

8 oz mushrooms, sliced (preferably cremini or button)

1 cup beef broth

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 tablespoon flour (for thickening)

1 tablespoon cornstarch (optional, for extra thickness)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cooked rice or mashed potatoes (for serving)

Instructions
 

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper. Add the beef to the skillet in a single layer, cooking for about 3-4 minutes on each side or until browned. Remove the beef from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the chopped onion and cook for about 3 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms are browned and have released their moisture.

      Create the Gravy: Sprinkle the flour over the mushroom mixture and stir to combine. Cook for about 1 minute. Slowly add the beef broth, Worcestershire sauce, and soy sauce while stirring to prevent lumps. If you prefer a thicker gravy, mix the cornstarch with a little water and add to the mixture at this stage.

        Combine and Simmer: Return the beef to the skillet and stir well. Reduce the heat to low and let the mixture simmer for about 15-20 minutes, allowing the flavors to meld and the beef to become tender. Stir occasionally and adjust seasoning with salt and pepper.

          Serve: Once the gravy has thickened to your liking, remove from heat. Serve the beef tips and gravy over a bed of cooked rice or creamy mashed potatoes. Garnish with fresh chopped parsley.
