1 lb beef sirloin, thinly sliced

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon smoked paprika

1/2 teaspoon ground turmeric

1/2 teaspoon cayenne pepper (adjust to taste)

4 cloves garlic, minced

Salt and pepper to taste

4 pita breads or flatbreads

1 cup tahini sauce (or garlic sauce)

1 cup fresh lettuce, shredded

1 tomato, diced

1 cucumber, sliced

1/4 red onion, thinly sliced

Fresh parsley, chopped (for garnish)

Instructions
 

In a large bowl, mix the olive oil with cumin, coriander, paprika, turmeric, cayenne, minced garlic, salt, and pepper to create a marinade. Add the thinly sliced beef to the bowl and coat well. Let it marinate for at least 30 minutes (or longer for a deeper flavor, preferably 2 hours).

    Heat a large skillet or grill pan over medium-high heat. Add the marinated beef slices in a single layer, cooking them for about 3-4 minutes on each side, or until browned and cooked through. Remove the beef from heat and let it rest for a couple of minutes.

      While the beef is resting, warm the pita or flatbreads in a dry skillet over low heat for a minute or two on each side until pliable.

        To assemble the sandwich, spread a generous amount of tahini sauce on one side of the pita. Layer the cooked beef slices on top.

          Add lettuce, diced tomatoes, cucumber slices, and red onion on top of the beef.

            Sprinkle fresh parsley over the assembled sandwich for added color and flavor.

              Fold the pita in half, pressing down gently to seal the filling inside. Serve warm with a side of extra tahini sauce for dipping.
