1 lb ground beef

1 cup grated Parmesan cheese

2 cups all-purpose flour, plus extra for dusting

2 large eggs

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 cup ricotta cheese

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish (optional)

Instructions
 

Make the Dough: In a large mixing bowl, combine the flour and salt. Create a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs until a dough forms. Knead for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes at room temperature.

    Prepare the Filling: In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add pepper, garlic powder, and season to taste. Remove from heat and let cool slightly. Once cooled, mix in the ricotta and ½ cup of Parmesan cheese until well combined.

      Roll Out the Dough: Divide the rested dough into four portions. Roll out each portion on a floured surface until thin (about 1/8 inch thick). Cut into squares of about 3x3 inches.

        Fill the Tortellini: Place about 1 teaspoon of the beef and cheese mixture in the center of each square. Fold the square diagonally to form a triangle, pressing the edges to seal completely. Bring the two ends of the triangle together to form a tortellini shape, pressing to seal.

          Cook the Tortellini: Bring a large pot of salted water to a boil. Carefully add the tortellini, cooking in batches if necessary. Boil for 4-5 minutes or until they float to the top and are cooked through. Remove with a slotted spoon and set aside.

            Heat the Sauce: In a saucepan, warm the marinara sauce over medium heat. Once heated, add the cooked tortellini and gently toss to coat.

              Serve: Plate the tortellini, sprinkle with the remaining Parmesan cheese, and garnish with fresh basil leaves if desired. Enjoy warm!
