2 lbs beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 medium potatoes, diced

1 red bell pepper, chopped

1 green bell pepper, chopped

1 can (14 oz) diced tomatoes with green chilies

4 cups beef broth

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh cilantro, for garnish

1 lime, cut into wedges

Instructions
 

In a large heavy-bottomed pot, heat the olive oil over medium-high heat.

    Add the beef cubes in batches, searing them until browned on all sides. Remove the beef and set aside.

      In the same pot, add the diced onion and garlic. Sauté for about 2 minutes until the onion is translucent.

        Stir in the carrots, potatoes, red, and green bell peppers, cooking for another 5 minutes until the vegetables begin to soften.

          Return the beef to the pot and add the diced tomatoes with their juices, beef broth, chili powder, cumin, smoked paprika, salt, and pepper.

            Bring the stew to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the beef is tender.

              Taste the stew and adjust seasoning if necessary.

                Serve hot, garnished with fresh cilantro and lime wedges on the side for squeezing.
