1 pound ground beef

1 large onion, diced

2 cloves garlic, minced

2 medium potatoes, peeled and cubed

1 cup diced carrots

1 cup corn (fresh, frozen, or canned)

4 cups beef broth

1 cup heavy cream

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot over medium heat, add the olive oil. Once hot, add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add the ground beef to the pot, breaking it apart with a spoon. Cook until browned (about 5-7 minutes). Drain any excess fat if needed.

      Stir in the smoked paprika, salt, and pepper, mixing well until combined.

        Add the cubed potatoes and diced carrots to the pot, pouring in the beef broth. Bring the mixture to a boil, then lower the heat and simmer for 15-20 minutes or until the vegetables are tender.

          Once the vegetables are cooked, add the corn and heavy cream. Stir well and let the chowder simmer for an additional 5-7 minutes until heated through. Taste and adjust seasoning if necessary.
