2 lbs beef chuck, cut into 2-inch cubes

4 tablespoons olive oil

3 large onions, thinly sliced

4 cloves garlic, minced

3 cups beef broth

2 tablespoons apple cider vinegar

2 tablespoons brown sugar

1 tablespoon Dijon mustard

2 bay leaves

1 teaspoon dried thyme

Salt and pepper to taste

4 large carrots, chopped into chunks

4 medium potatoes, peeled and cut into pieces

1/2 cup chopped fresh parsley (for garnish)

Instructions
 

In a large, heavy-bottomed pot, heat 2 tablespoons of olive oil over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove and set aside.

    In the same pot, add the remaining 2 tablespoons of olive oil and add the sliced onions. Cook for about 8 minutes, stirring occasionally, until the onions are soft and caramelized.

      Stir in the minced garlic and cook for an additional minute, until fragrant.

        Return the browned beef to the pot. Add in the beef broth, apple cider vinegar, brown sugar, Dijon mustard, bay leaves, and thyme. Stir to combine.

          Season with salt and pepper. Bring the stew to a gentle simmer, then cover the pot and reduce the heat to low. Let it simmer for 1.5 hours, stirring occasionally.

            After 1.5 hours, add the chopped carrots and potatoes to the pot. Stir gently to incorporate and continue simmering for another 30-40 minutes, or until the vegetables are tender and the beef is fork-tender.

              Once done, taste and adjust seasoning if necessary, removing bay leaves before serving.
