2 lbs beef chuck, cut into 1.5-inch cubes

4 slices of thick bacon, diced

2 cups beef broth

2 cups carrots, sliced into rounds

1 cup pearl onions, peeled

4 cloves garlic, minced

2 tablespoons tomato paste

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 bay leaves

Salt and pepper to taste

3 tablespoons all-purpose flour

2 tablespoons olive oil

Fresh parsley, chopped for garnish

Instructions
 

In a large Dutch oven or heavy-bottomed pot, cook the diced bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving the drippings in the pot.

    Increase the heat to medium-high and add olive oil to the pot. Season the beef chunks with salt and pepper, then brown them in batches in the bacon drippings until a nice crust forms on all sides. Remove the beef and set it aside.

      In the same pot, add the pearl onions and carrots. Sauté for about 5 minutes until slightly softened. Stir in the minced garlic and cook for an additional minute.

        Add the tomato paste and flour to the pot, stirring to combine well and cook for about 2 minutes to eliminate the raw flour taste.

          Return the bacon and beef chunks to the pot. Add the beef broth, thyme, bay leaves, and season with additional salt and pepper to taste. Bring to a simmer, then cover the pot with a lid.

            Reduce the heat to low and let it cook for about 2.5 to 3 hours, stirring occasionally, until the beef is tender and melt-in-your-mouth delicious.

              Once cooked, remove the bay leaves and adjust seasoning as necessary. Let the dish rest for 10 minutes before serving.

                Garnish with fresh chopped parsley before serving.
