Beef and Raisin Empanadas

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon cinnamon

1 cup raisins

1/4 cup green olives, chopped

2 tablespoons tomato paste

Salt and pepper to taste

2 tablespoons olive oil

2 cups all-purpose flour

1/2 teaspoon salt (for dough)

1/4 cup cold butter, cubed

1/2 cup cold water

1 egg (for egg wash)

Prepare the Filling: In a large skillet over medium heat, add olive oil. Sauté the chopped onion and minced garlic until soft and translucent, about 5 minutes.

    Cook the Beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 8 minutes. Drain excess fat if necessary.

      Season the Mixture: Stir in cumin, paprika, cinnamon, salt, and pepper. Then add the raisins, chopped olives, and tomato paste. Mix well and let it simmer for about 5 minutes until the flavors meld. Remove from heat and let it cool while you prepare the dough.

        Make the Dough: In a large bowl, combine the flour and 1/2 teaspoon salt. Add the cold butter and mix until the mixture resembles coarse crumbs. Slowly add cold water, mixing until the dough comes together. Divide the dough into two equal parts, form into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.

          Roll Out the Dough: On a floured surface, roll out one disk of dough to about 1/8-inch thickness. Use a round cutter (about 4-5 inches in diameter) to cut circles. Repeat with the second disk.

            Fill the Empanadas: Place a tablespoon of the cooled beef filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch.

              Prepare for Baking: Preheat the oven to 375°F (190°C). Place the empanadas on a baking sheet lined with parchment paper. Beat the egg and brush it over the tops of each empanada for a golden finish.

                Bake: Bake in the preheated oven for 25-30 minutes, or until the empanadas are golden brown and crisp.
