1 lb beef stew meat, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 cup pearl barley, rinsed

6 cups beef broth

1 can (14.5 oz) diced tomatoes, with juices

1 bay leaf

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and sear until browned on all sides, about 4-5 minutes. Remove the beef from the pot and set aside.

    Sauté Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.

      Combine Ingredients: Return the browned beef to the pot. Add the rinsed pearl barley, beef broth, diced tomatoes (with their juices), bay leaf, thyme, rosemary, salt, and black pepper.

        Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1 hour, or until the beef is tender and the barley is cooked through.

          Final Touches: Taste the soup and adjust seasoning as necessary. Remove the bay leaf before serving.

            Serve: Ladle the soup into bowls, garnish with chopped fresh parsley, and enjoy it warm!
