1 can (15 oz) of cannellini beans, drained and rinsed

1 can (14 oz) diced tomatoes, preferably fire-roasted

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

4 slices of whole-grain bread or sourdough

Optional: Crumbled feta cheese or a drizzle of balsamic glaze for topping

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until it becomes translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Beans: Add the drained cannellini beans and diced tomatoes to the skillet. Stir in the smoked paprika, dried oregano, red pepper flakes, salt, and black pepper. Let the mixture simmer for about 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly. Stir occasionally.

      Prepare the Toast: While the beans are simmering, toast the slices of bread until golden brown and crispy. You can do this in a toaster or under a broiler for a couple of minutes.
