Ingredients
  

1 pound large shrimp, peeled and deveined

8 slices of bacon, cut in half

1 medium ripe peach, pitted and cut into wedges

1/2 cup BBQ sauce

1/4 cup sweet chili sauce

1 tablespoon olive oil

1 tablespoon fresh lime juice

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Skewers (soaked in water if wooden)

Instructions
 

Marinate the Shrimp: In a bowl, combine the BBQ sauce, sweet chili sauce, olive oil, lime juice, garlic powder, smoked paprika, salt, and pepper. Reserve a couple of tablespoons for basting later. Add the shrimp to the marinade, toss well, and let them marinate in the fridge for at least 30 minutes.

    Prepare the Bacon: While the shrimp is marinating, preheat your grill to medium heat. Take the bacon slices and slightly cook them in a pan over medium heat for about 2-3 minutes, just until they start to render fat but are not fully crispy. Remove from heat and let cool slightly.

      Assemble the Kabobs: On each skewer, start by placing a wedge of peach, then wrap a shrimp with a half slice of bacon, and spear it onto the skewer. Alternate between shrimp and peach until the skewer is filled. Repeat until all shrimp are used.

        Grill the Kabobs: Place the assembled kabobs on the preheated grill. Grill for about 4-5 minutes on each side, brushing with the reserved marinade. Cook until the shrimp are opaque and the bacon is crispy, approximately 10-12 minutes in total.

          Serve: Once done, remove from the grill and let cool for a couple of minutes. Serve warm with extra BBQ or sweet chili sauce for dipping.
