BBQ Chicken Sheet Pan Meal

Ingredients
  

4 boneless, skinless chicken thighs

1 cup BBQ sauce (your choice)

2 cups baby potatoes, halved

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 yellow onion, sliced

2 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the halved baby potatoes, diced red bell pepper, sliced onion, corn, olive oil, garlic powder, smoked paprika, salt, and pepper. Toss well to coat all the vegetables.

      Arrange the vegetable mixture in an even layer on one half of a large sheet pan.

        In the same mixing bowl, place the chicken thighs and pour half of the BBQ sauce over them, ensuring they are well-coated.

          Place the chicken on the other half of the sheet pan.

            Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C) and the potatoes are tender.

              In the last 5 minutes of baking, brush the remaining BBQ sauce over the chicken for a sticky glaze.

                Remove the sheet pan from the oven and let it cool for a few minutes.

                  Garnish with chopped fresh parsley before serving.
