4 pork sausages (preferably herb-flavored)

1 lb (450g) Yukon Gold potatoes, peeled and chopped

1/2 cup whole milk

4 tablespoons unsalted butter

Salt and pepper to taste

2 large onions, thinly sliced

2 tablespoons flour

2 cups low-sodium beef stock

1 teaspoon Worcestershire sauce

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon olive oil

Prepare the Mash: In a large pot, bring water to a boil, add the chopped potatoes, and a pinch of salt. Cook until tender, about 20 minutes. Drain and return to the pot.
