Ingredients

4 spicy pork sausages

4 large Yukon Gold potatoes, peeled and chopped

1/2 cup milk

4 tablespoons unsalted butter

Salt and pepper to taste

1 large onion, thinly sliced

2 tablespoons all-purpose flour

2 cups chicken or vegetable broth

1 teaspoon Worcestershire sauce

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)

Instructions

Cook the Sausages: In a large skillet over medium heat, cook the sausages until browned and cooked through, about 15 minutes. Turn them occasionally to ensure even browning. Once cooked, set aside and keep warm.

Prepare the Mash: While the sausages are cooking, bring a large pot of salted water to a boil. Add the chopped potatoes and cook until tender, about 15-20 minutes. Drain the potatoes, then return them to the pot.

Make the Creamy Mash: Add the milk and butter to the potatoes and mash until smooth and creamy. Season with salt and pepper to taste. Set aside and keep warm.

Prepare the Onion Gravy: In the same skillet used for the sausages, add the sliced onions. Cook over medium heat until they become translucent and start to caramelize, about 8-10 minutes. Stir occasionally.

Thicken the Gravy: Sprinkle the flour over the caramelized onions and stir for 1-2 minutes. Gradually pour in the chicken or vegetable broth, stirring constantly until the mixture is smooth and thickened, about 3-4 minutes. Stir in the Worcestershire sauce and thyme, then season with salt and pepper to taste.

Serve: On a large plate, spoon a generous serving of the creamy mashed potatoes. Place two sausages on top, then pour the savory onion gravy over the sausages and potatoes.
