Ingredients

6 pork sausages (preferably herbed)

2 pounds of potatoes (Yukon Gold or Russet), peeled and cubed

1/2 cup milk

4 tablespoons unsalted butter

Salt and pepper to taste

2 large onions, thinly sliced

2 tablespoons all-purpose flour

2 cups beef or vegetable broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

Fresh parsley, chopped (for garnish)

Instructions

Cook the Sausages: In a large skillet over medium heat, cook the sausages for about 10-12 minutes, turning regularly until they are golden brown and cooked through. Transfer them to a plate and cover to keep them warm.

Prepare the Potatoes: While the sausages are cooking, place the cubed potatoes in a pot of salted water and bring to a boil. Cook for 15-20 minutes or until tender. Drain and return to the pot.

Mash the Potatoes: Add the butter and milk to the drained potatoes. Mash them until smooth, then season with salt and pepper to taste. Set aside and keep warm.

Make the Onion Gravy: In the same skillet used for sausages, add the sliced onions and sauté over medium heat until they become soft and caramelized, about 10-15 minutes.

Thicken the Gravy: Sprinkle the flour over the onions and stir well to incorporate. Cook for another minute, then gradually whisk in the beef or vegetable broth, ensuring there are no lumps.

Add Flavor: Stir in the Worcestershire sauce and dried thyme. Allow the gravy to simmer for about 5-10 minutes until it thickens. Season with salt and pepper to taste.

Serve: On each plate, create a generous mound of mashed potatoes, place two sausages on top, and drizzle with the rich onion gravy.

Garnish: Finish with a sprinkle of fresh parsley for color and flavor.
