4 medium Yukon Gold potatoes, peeled and cubed

1 cup whole milk

4 tablespoons unsalted butter

1 tablespoon olive oil

1 large onion, thinly sliced

2 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 tsp dried thyme)

1 tablespoon mustard (Dijon or whole grain)

Salt and pepper to taste

Chopped fresh parsley for garnish

Prepare the Potatoes: Place the cubed potatoes in a large pot and cover with cold, salted water. Bring to a boil, then reduce the heat and simmer for about 15-20 minutes, or until fork-tender. Drain and return to the pot.

    Make the Mash: Add the butter and whole milk to the drained potatoes. Mash until smooth and creamy. Season to taste with salt and pepper. Keep warm.

      Cook the Sausages: In a large skillet, heat olive oil over medium heat. Add the sausages and cook, turning frequently, until browned and cooked through, about 12-15 minutes. Remove them from the pan and keep warm.

        Sauté the Onions: In the same skillet, add the sliced onions and cook until caramelized, about 8-10 minutes. Stir in the minced garlic and fresh thyme, cooking for another 2 minutes.

          Combine Flavors: Add the mustard to the onions and mix well. Return the sausages to the skillet to warm through with the onion mixture for about 2-3 minutes.
