4 pork sausages (or your choice of chicken or vegetarian sausages)

2 tablespoons olive oil

1 onion, thinly sliced

2 cloves garlic, minced

4 large potatoes, peeled and chopped

½ cup milk

4 tablespoons unsalted butter

¼ cup sour cream

Salt and pepper to taste

2 tablespoons fresh chives, chopped for garnish

2 cups beef broth (or vegetable broth for a vegetarian option)

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

Cook the Sausages: In a large skillet over medium heat, add the olive oil. Once hot, add the sausages and cook until browned on all sides, about 10-12 minutes. Remove and set aside.

    Sauté Onions and Garlic: In the same skillet, add the sliced onion and cook until softened and slightly caramelized, about 5-7 minutes. Add the minced garlic and sauté for another minute until fragrant.

      Prepare the Broth Sauce: Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well, scraping any browned bits from the bottom of the skillet. Return the sausages to the skillet, cover, and let simmer on low heat for 10 minutes to heat through and allow flavors to meld.

        Make the Mash: While the sausages are simmering, place the chopped potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

          Creamy Mash: Add the milk, butter, sour cream, salt, and pepper to the drained potatoes. Mash until smooth and creamy, adjusting milk and butter based on desired creaminess.
