4 pork sausages (your choice of flavor)

4 large russet potatoes, peeled and cubed

1/2 cup whole milk

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1/4 cup fresh chives, finely chopped

Salt and pepper to taste

1 tablespoon olive oil

1/4 cup chicken or vegetable broth (optional for flavor)

Instructions
 

Cook the Sausages: In a large skillet, heat olive oil over medium heat. Add the sausages and cook until golden brown and cooked through, about 15-20 minutes, turning occasionally to ensure even browning. You can add chicken or vegetable broth for added flavor if desired. Once done, remove from pan and let rest.

    Boil the Potatoes: While the sausages are cooking, fill a large pot with water and add a pinch of salt. Bring to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain the potatoes once they’re soft.

      Make the Mash: Return the drained potatoes to the pot. Add 2 tablespoons of butter, whole milk, and season with salt and pepper. Mash the potatoes until smooth and creamy. Adjust the milk for consistency if necessary.

        Prepare Garlic Chive Butter: In a small pan, melt the remaining 2 tablespoons of butter over low heat. Add the minced garlic and cook for about 2 minutes, until fragrant but not browned. Stir in the chopped chives and cook for another minute.

          Serve: On each plate, create a generous mound of mashed potatoes. Place the sausages on top or beside the mash. Drizzle the garlic chive butter over the sausages and mash for an extra burst of flavor.
