4 high-quality pork sausages (or chicken sausages for a lighter option)

4 large potatoes, peeled and chopped

1/2 cup heavy cream

1/4 cup unsalted butter

Salt and pepper to taste

2 tablespoons olive oil

1 onion, finely sliced

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Boil the Potatoes: In a large pot, add the chopped potatoes and cover with cold water. Bring to a boil over medium-high heat and cook for 15-20 minutes, or until tender when pierced with a fork.

    Cook the Sausages: While the potatoes are boiling, heat olive oil in a skillet over medium heat. Add the sausages and cook, turning occasionally, until browned and cooked through, about 10-12 minutes. Remove the sausages and set aside.

      Make the Gravy: In the same skillet, add the sliced onion and cook until softened, about 5 minutes. Add the minced garlic and thyme, cooking for an additional minute until fragrant. Stir in the Worcestershire sauce, scraping up any browned bits from the bottom of the pan.

        Thicken the Gravy: Add 1/2 cup of water to the skillet and let it simmer for a few minutes. Then whisk in the butter until melted and the gravy has thickened slightly. Season with salt and pepper to taste.

          Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Add heavy cream, butter, salt, and pepper, then mash until smooth and creamy.

            Serve: On each plate, place a generous scoop of mashed potatoes, top with two sausages, and generously drizzle the garlic herb gravy over the sausages.

              Garnish: Sprinkle with chopped parsley before serving.
