Ingredients
  

1 lb boneless, skinless chicken thighs

1 cup all-purpose flour

1/2 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

1 cup buttermilk

1 cup panko breadcrumbs

Vegetable oil (for frying)

1/2 cup mayonnaise

3 tbsp sweet chili sauce

1 tbsp sriracha (adjust to taste)

Mini slider buns (8-10)

Lettuce leaves (for garnish)

Sliced cucumbers (optional, for topping)

Fresh cilantro (for garnish)

Instructions
 

Prep the Chicken: Start by trimming any excess fat from the chicken thighs and pat them dry with a towel. Season both sides with salt and pepper.

    Setup Breading Station: In three separate bowls, prepare the flour mixture by combining flour, paprika, garlic powder, and onion powder. In the second bowl, pour the buttermilk. In the third bowl, place the panko breadcrumbs.

      Coat the Chicken: Dip each piece of chicken in the flour mixture, ensuring it’s fully coated. Then transfer it to the buttermilk, allowing excess to drip off before covering it completely with panko breadcrumbs. Press the breadcrumbs onto the chicken to ensure they stick well.

        Fry the Chicken: In a large skillet, heat vegetable oil over medium-high heat until it shimmers (about 350°F). Carefully add the chicken in batches, frying for about 4-5 minutes on each side until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

          Make Bang Bang Sauce: In a bowl, combine mayonnaise, sweet chili sauce, and sriracha. Mix until smooth and adjust spice level if desired.

            Assemble the Sliders: Slice the slider buns in half and toast them lightly if preferred. Spread a generous amount of Bang Bang sauce on both inner sides of the buns. Add a piece of fried chicken, a piece of lettuce, and top with sliced cucumbers and fresh cilantro.

              Serve and Enjoy: Place sliders on a serving platter and drizzle a little more Bang Bang sauce on top if desired. Serve immediately while the chicken is still warm.
