Ingredients

2 boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for spice level)

Salt and pepper to taste

Vegetable oil (for frying)

4 sandwich buns

1 cup lettuce (shredded)

1 medium tomato, sliced

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon Sriracha (optional, for additional heat)

1/4 cup cilantro (for garnish)

Instructions

Marinate the Chicken: In a bowl, soak the chicken breasts in buttermilk for at least 1 hour (or overnight for best results). This allows for tender and flavorful chicken.

Prepare the Coating: In a separate bowl, whisk together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.

Heat the Oil: In a large frying pan, pour in enough vegetable oil to cover the bottom and heat over medium-high heat until shimmering.

Coat the Chicken: Remove the chicken from the buttermilk, allowing the excess to drip off, then dredge each piece in the flour mixture, pressing lightly to ensure an even coating.

Fry the Chicken: Carefully place the coated chicken in the hot oil. Fry for about 6-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove and place on a paper towel-lined plate to drain excess oil.

Prepare the Sauce: While the chicken is frying, in a small bowl, mix the mayonnaise with sweet chili sauce and Sriracha (if using). Adjust the level of Sriracha based on desired heat.

Assemble the Sandwich: On the bottom half of each sandwich bun, spread a generous layer of the spicy mayo sauce. Add a piece of crispy chicken on top, followed by shredded lettuce, tomato slices, and a sprinkle of cilantro.

Serve: Place the top half of the bun on your sandwich, and serve immediately with extra spicy mayo on the side, if desired.
