2 large eggs

½ cup buttermilk

2 ripe bananas, sliced

2 tbsp unsalted butter

¼ cup brown sugar

1 tbsp lemon juice

1 cup whole milk

2 tbsp cornstarch

¼ cup granulated sugar

1 tsp vanilla extract

1 cup heavy cream, whipped

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

    Prepare the Cupcake Batter: In a bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, cream the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract and mashed bananas.

      Combine Wet and Dry Ingredients: Gradually mix the dry ingredients into the wet mixture, alternating with the buttermilk. Mix until just combined.
