2 ripe bananas, mashed

2 cups rolled oats

1 cup milk (dairy or plant-based)

½ cup almond butter (or any nut butter)

¼ cup maple syrup or honey

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon cinnamon

¼ teaspoon salt

½ cup chopped walnuts or pecans (optional)

¼ cup dark chocolate chips (optional)

Sliced bananas and extra nuts for topping

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a 9x9 inch baking dish.

    In a large bowl, mash the ripe bananas until smooth.

      Add the rolled oats, milk, almond butter, maple syrup, vanilla extract, baking powder, cinnamon, and salt to the mashed bananas. Mix until everything is well incorporated.

        If desired, fold in the chopped walnuts and dark chocolate chips for extra flavor and texture.

          Pour the mixture into the prepared baking dish, spreading it out evenly.

            Top with sliced bananas and additional nuts if desired.

              Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the oatmeal is set.
