Ingredients
  

1 pound large shrimp, peeled and deveined

1 cup uncooked white rice

2 cups vegetable broth

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 cup frozen peas

1 cup cream of mushroom soup

1 teaspoon paprika

1 teaspoon Old Bay seasoning

Salt and pepper to taste

1 cup shredded cheddar cheese

1 cup panko breadcrumbs

4 tablespoons unsalted butter, melted

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13 inch casserole dish with butter or cooking spray.

    Cook the Rice: In a medium saucepan, bring the vegetable broth to a boil. Add the rice, stir once, reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and set aside.

      Sauté the Vegetables: In a large skillet over medium heat, add a splash of oil. Sauté the diced onion and bell pepper until they are soft, about 5-6 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: In the same skillet, add the cooked rice, frozen peas, cream of mushroom soup, paprika, Old Bay seasoning, salt, and pepper. Stir in the shrimp and half of the cheddar cheese. Mix until everything is well combined.

          Transfer to Casserole Dish: Pour the shrimp and rice mixture into the prepared casserole dish. Spread evenly to ensure the shrimp is well distributed.

            Prepare the Buttery Crumb Topping: In a small bowl, combine the panko breadcrumbs, melted butter, and the remaining cheddar cheese. Mix until all the breadcrumbs are coated with butter.

              Top and Bake: Sprinkle the buttery crumb topping evenly over the shrimp mixture in the casserole dish. Bake in the preheated oven for 25-30 minutes, or until the shrimp are cooked through and the topping is golden brown.

                Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.
