2 medium zucchini, cut into fry shapes

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs, beaten

Olive oil spray (or regular olive oil for brushing)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    In a mixing bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix well to ensure even distribution of spices.

      Place the beaten eggs in a separate bowl. This will serve as the egg wash for the zucchini fries.

        Dunk each zucchini fry into the beaten eggs, allowing any excess to drip off before transferring to the breadcrumb mixture.

          Coat each zucchini fry evenly with the breadcrumb-Parmesan mixture, pressing gently to ensure it adheres well. Place them on the prepared baking sheet.

            Lightly spray the fries with olive oil or brush a thin layer over them. This helps achieve a crispy finish during baking.

              Bake in the preheated oven for 20–25 minutes or until the fries are golden brown and crispy, flipping them halfway through for even cooking.

                Once done, remove from the oven and allow to cool for a couple of minutes before serving.
