1 cup quinoa, rinsed

2 cups vegetable broth

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 avocado, sliced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

1/2 cup Greek yogurt (or dairy-free alternative) for topping

Instructions
 

In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Fluff with a fork and set aside.

    In a skillet over medium heat, add the black beans, corn, and diced red bell pepper. Season with smoked paprika, cumin, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until heated through and slightly caramelized.

      In a large bowl, combine the cooked quinoa with the bean and corn mixture. Add the chopped red onion, cherry tomatoes, and cilantro. Squeeze lime juice over the mixture and toss gently to combine.

        To serve, scoop generous portions of the Baja mixture into bowls and top each with sliced avocado and a dollop of Greek yogurt.

          Garnish with additional cilantro and lime wedges on the side if desired.
