Ingredients
  

1 medium fresh pineapple, cut into bite-sized chunks

12 slices of thick-cut bacon

1/4 cup brown sugar

1/4 teaspoon cayenne pepper (optional for heat)

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1 tablespoon honey (optional for drizzling)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Pineapple: Cut the pineapple into bite-sized cubes, about 1 to 1.5 inches in size. Set aside.

      Prepare Bacon: Take the bacon slices and cut them in half. This will give you 24 half-slices.

        Wrap Pineapple: Take a piece of pineapple and wrap it with a half slice of bacon. Secure it with a toothpick. Repeat this for all pineapple pieces.

          Mix Spices: In a small bowl, combine brown sugar, cayenne pepper (if using), smoked paprika, and black pepper.

            Coat Pineapple: Place the bacon-wrapped pineapple on a baking sheet lined with parchment paper. Sprinkle the spice mixture generously over them.

              Bake: Bake in the preheated oven for about 20-25 minutes, or until the bacon is crispy and golden brown. You may want to turn them halfway through cooking for even crispiness.
