2 filet mignon steaks (6-8 oz each)

4 slices of thick-cut bacon

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon butter

Optional: balsamic glaze for drizzling

Preheat your oven: Preheat your oven to 400°F (200°C).

    Prepare the steaks: Pat the filet mignon steaks dry with paper towels. Season generously with salt and freshly ground black pepper on both sides.

      Wrap with bacon: Lay 2 slices of bacon side by side and place a filet mignon in the center. Wrap the bacon tightly around the steak and secure with toothpicks. Repeat with the second steak.

        Sear the steaks: In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the bacon-wrapped filets and sear for about 3-4 minutes on each side until the bacon is crispy and browned.

          Add flavor: Reduce the heat to medium and add the minced garlic and chopped rosemary to the skillet, allowing them to cook for about 1 minute until fragrant. Then, add the butter, swirling it around the pan to coat the steaks.

            Transfer to the oven: Move the skillet to the preheated oven. Roast for about 6-10 minutes, depending on your desired level of doneness (6 minutes for rare, 8 minutes for medium-rare, and 10 minutes for medium).

              Rest the steaks: Once cooked, remove the skillet from the oven and let the steaks rest for 5 minutes. Remove toothpicks before serving.
