8 oz cream cheese, softened

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

4-6 fresh jalapeños, finely chopped (seeds removed for less heat)

6 strips of cooked bacon, crumbled

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

1 cup breadcrumbs (panko recommended)

2 large eggs, beaten

Salt and pepper to taste

Cooking oil for frying (canola or vegetable)

Instructions
 

In a large mixing bowl, combine the softened cream cheese, sharp cheddar, and Monterey Jack cheese until well blended.

    Stir in the finely chopped jalapeños, crumbled bacon, garlic powder, onion powder, smoked paprika, and season with salt and pepper. Mix until all ingredients are thoroughly incorporated.

      Using your hands, form the mixture into small balls, about 1 inch in diameter. Place them on a parchment-lined baking sheet. You should get about 20-24 balls.

        Set up a breading station: place the breadcrumbs in one shallow dish and the beaten eggs in another.

          Roll each cheese ball first in the egg wash, ensuring they are fully coated, then roll them in the breadcrumbs to coat evenly.

            Once all cheese balls are coated, refrigerate them for about 30 minutes to help them firm up.

              While the cheese balls are chilling, heat the cooking oil in a deep frying pan or a pot over medium heat until it reaches about 350°F (175°C).

                Fry the cheese balls in batches for about 3-4 minutes, or until they are golden brown and crispy all around. Be careful not to overcrowd the pan.

                  Remove the cheese balls from the oil and place them on a paper towel-lined plate to drain any excess oil.
