2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

1 cup shredded sharp cheddar cheese

1/2 cup cooked bacon, chopped (about 4-5 strips)

3/4 cup buttermilk

1 tablespoon fresh chives, chopped (optional)

1 egg (for egg wash, optional)

Extra cheese for topping (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well blended.

      Add Butter: Cut in the cold, cubed butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

        Incorporate Cheese and Bacon: Gently fold in the shredded cheddar cheese and chopped bacon until evenly distributed. If you're using chives, incorporate them at this stage as well.

          Add Buttermilk: Gradually pour in the buttermilk while mixing just until the dough comes together. Avoid overmixing; it’s okay if there are a few lumps.

            Shape Biscuits: Turn the dough out onto a floured surface. Pat it into a rectangle about 1-inch thick. Fold the dough in half and pat again to about 1-inch thickness. Repeat this process 2-3 times for flaky layers.

              Cut Biscuits: Using a biscuit cutter, cut out biscuits and place them on the prepared baking sheet. Gather any scraps, reform, and cut more biscuits.

                Optional Egg Wash: If desired, beat the egg and brush it on the tops of the biscuits for a nice golden finish. Top with extra cheddar cheese if you like.

                  Bake: Bake for 15-20 minutes or until the biscuits are golden brown and puffed up.
