2 cups shredded rotisserie chicken

4 cups mixed greens (lettuce, spinach, and arugula)

1 cup red cabbage, thinly sliced

1 carrot, julienned

1 bell pepper (red or yellow), sliced

½ cup edamame, shelled

¼ cup green onions, chopped

¼ cup sliced almonds

¼ cup crispy wonton strips

Sesame seeds for garnish

Dressing:

3 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon honey

1 tablespoon sesame oil

1 teaspoon grated ginger

1 teaspoon minced garlic

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the shredded rotisserie chicken, mixed greens, red cabbage, carrot, bell pepper, edamame, and green onions. Toss gently to combine.

    In a separate small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, grated ginger, and minced garlic until well combined. Adjust seasoning with salt and pepper to taste.

      Pour the dressing over the salad mixture and toss until everything is evenly coated.

        Just before serving, sprinkle sliced almonds and crispy wonton strips over the top for added crunch.

          Garnish with sesame seeds and serve immediately for maximum freshness!
