12 oz penne pasta

2 boneless, skinless chicken breasts, diced

1 cup Asiago cheese, grated (plus extra for topping)

1 cup heavy cream

2 tablespoons olive oil

3 cloves garlic, minced

1 cup fresh spinach, chopped

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the penne pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook until the chicken is golden brown and cooked through, about 7-10 minutes.

      Add the minced garlic to the skillet with the cooked chicken and sauté for 1-2 minutes until fragrant.

        Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Asiago cheese until melted and the sauce becomes creamy.

          Add the chopped spinach to the sauce and stir until wilted. If the sauce is too thick, gradually add the reserved pasta water until desired consistency is reached.

            Toss the cooked penne pasta into the sauce, combining everything well. Let it cook together for an additional 2-3 minutes to absorb the flavors.

              Remove from heat and serve immediately, topped with additional grated Asiago cheese and fresh basil leaves for garnish.
