Apricot Honey Ham

1 fully cooked bone-in ham (about 6-8 pounds)

1 cup apricot preserves

1/2 cup honey

2 tablespoons Dijon mustard

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon cloves

Salt and pepper to taste

Fresh thyme sprigs (for garnish)

Preheat your oven to 325°F (165°C).

    Place the ham on a rack in a roasting pan, flat side down. Score the surface in a diamond pattern, making shallow cuts about 1 inch apart. This will allow the glaze to seep in.

      In a medium saucepan over low heat, combine the apricot preserves, honey, Dijon mustard, ground cinnamon, ground ginger, and cloves. Stir until the preserves are melted and the mixture is smooth. Remove from heat.

        Season the scored ham generously with salt and pepper. Brush half of the apricot-honey glaze over the surface of the ham, making sure to fill in the scored cuts.

          Cover the ham loosely with aluminum foil and place it in the oven. Bake for 1 hour.

            After the first hour, remove the foil and baste the ham with additional glaze. Return to the oven uncovered and bake for another 30-45 minutes, basting every 15 minutes, until the ham is caramelized and heated through (internal temperature should reach at least 140°F or 60°C).

              Remove the ham from the oven and let it rest for about 15 minutes before slicing.

                Garnish with fresh thyme sprigs for an aromatic touch before serving.
