4 boneless, skinless chicken breasts

1 cup dried apricots, chopped

1 cup chicken broth

1/2 cup honey

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon cinnamon

1/4 cup chopped fresh parsley (for garnish)

Prepare the Marinade: In a mixing bowl, combine the chopped apricots, chicken broth, honey, Dijon mustard, minced garlic, grated ginger, cinnamon, salt, and pepper. Mix well until all ingredients are evenly combined.

    Marinate the Chicken: Place the chicken breasts in a large resealable bag or shallow dish. Pour the apricot marinade over the chicken, ensuring it's well-coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 1 hour (or up to 6 hours for enhanced flavor).

      Preheat the Oven: Preheat your oven to 375°F (190°C).
