6 slices thick-cut bacon, chopped

2 cups apples, peeled, cored, and diced (use a mix of sweet and tart varieties)

1 medium onion, finely chopped

1/2 cup brown sugar

1/4 cup apple cider vinegar

2 tablespoons maple syrup

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

1/4 cup water

Instructions
 

In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and drain on paper towels, leaving the rendered fat in the skillet.

    Add the chopped onion to the skillet and sauté in the bacon fat for about 5-7 minutes, or until softened and translucent.
