6 medium apples (Granny Smith or Honeycrisp), peeled, cored, and sliced

1 cup brown sugar

1/2 cup granulated sugar

2 tablespoons lemon juice

2 teaspoons ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon allspice

2 tablespoons cornstarch

1 tablespoon unsalted butter, diced

1 package (2 crusts) refrigerated pie crusts (or homemade if preferred)

1 egg, beaten (for egg wash)

1 tablespoon milk (for egg wash)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large bowl, combine the sliced apples, brown sugar, granulated sugar, lemon juice, ground cinnamon, nutmeg, allspice, and cornstarch. Toss until the apples are evenly coated, then let them sit for about 10-15 minutes to release their juices.

      Roll out one of the pie crusts and place it in a 9-inch pie pan, pressing it into the edges. Trim any overhanging dough.

        Pour the apple mixture into the crust, ensuring it is heaped slightly in the center for an appealing look. Dot the filling with small pieces of diced butter.

          Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal the pie. Cut several slits into the top crust for steam to escape and brush the top with the egg wash (beat the egg with milk).

            Bake the pie in the preheated oven for 15 minutes. Then reduce the temperature to 350°F (175°C) and bake for an additional 30-35 minutes, or until the apples are tender and the crust is golden brown.

              Allow the pie to cool for at least 2 hours before serving so the juices can thicken.
