Ingredients

2 medium-sized apples, peeled, cored, and diced (preferably Granny Smith)

1 cup all-purpose flour

1/2 cup granulated sugar

1 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp salt

1/4 cup whole milk

1 large egg

1 tsp vanilla extract

1/4 cup apple cider (optional for more flavor)

1/2 cup powdered sugar (for icing)

Oil for frying

Instructions

Prepare the Apples: Dice the peeled and cored apples into small cubes. If you'd like, toss them in a little lemon juice to prevent browning.

Make the Batter: In a large bowl, mix flour, sugar, baking powder, cinnamon, and salt. Whisk in the milk, egg, vanilla extract, and apple cider until smooth.

Incorporate Apples: Gently fold the diced apples into the batter until well coated.

Heat Oil: In a deep fryer or heavy pan, heat oil over medium heat. You want enough oil to submerge the fritter bites, about 2 inches deep.

Fry the Bites: Once the oil is hot (around 350°F), drop spoonfuls of the batter mixture into the oil. Fry in batches, making sure not to overcrowd the pan. Cook each side for about 2-3 minutes or until golden brown.

Drain Excess Oil: Remove the fritter bites with a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.

Prepare the Icing: In a small bowl, whisk powdered sugar with 1-2 tablespoons of water or milk until it reaches a drizzling consistency.

Drizzle Icing: Once fritter bites have cooled slightly, drizzle the icing on top. You can also sprinkle a dash of cinnamon for added flavor.

Serve: Enjoy your apple fritter bites warm as a delightful snack or dessert!
