Ingredients
  

2 medium apples, peeled and diced (I recommend Granny Smith for tartness)

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup whole milk

1 large egg

1 teaspoon vanilla extract

1/4 cup powdered sugar (for glazing)

Begin by peeling and dicing the apples into small cubes. Set them aside.

    In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, and salt until well combined.

      In another bowl, mix the milk, egg, and vanilla extract until smooth.

        Gradually pour the wet ingredients into the dry mixture, stirring until just combined. Be careful not to over-mix; it’s okay if there are a few lumps.

          Gently fold in the diced apples, ensuring they are evenly distributed throughout the batter.

            In a deep skillet or heavy pot, heat oil over medium heat (about 350°F or 175°C). You’ll want enough oil to submerge the bites halfway.

              Once the oil is hot, use a small cookie scoop or spoon to drop bite-sized amounts of batter into the oil, frying a few at a time to avoid overcrowding.

                Fry each batch for about 2-3 minutes on each side, or until they are golden brown and puffed. Remove from the oil and place them on a paper towel-lined plate to drain excess oil.

                  In a small bowl, mix the powdered sugar with a teaspoon of water to create a glaze. You may adjust with more sugar or water to achieve your desired consistency.

                    Once all bites are fried, drizzle the glaze over them while they are still warm, allowing it to set.
