2 medium-sized apples (preferably Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/2 cup granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp salt

1/2 cup milk

2 large eggs

1 tsp vanilla extract

1/2 cup powdered sugar (for the glaze)

2 tbsp milk (for the glaze)

Oil for frying (such as vegetable or canola oil)

Prepare the Apples: In a medium bowl, toss the diced apples with a tablespoon of sugar and a dash of cinnamon. Set aside to let them marinate for about 10 minutes.

    Make the Batter: In another large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, cinnamon, and salt. Whisk well to combine.

      Add Wet Ingredients: In a separate bowl, whisk together the milk, eggs, and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined. Be careful not to overmix—the batter should be lumpy.

        Fold in the Apples: Gently fold the marinated apples into the batter until they are evenly distributed.
