2 medium apples (preferably Granny Smith), peeled and diced

1/2 cup all-purpose flour

1/2 cup whole wheat flour

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

Extra granulated sugar for coating

Prepare the Apples: In a bowl, mix the diced apples with 1 tablespoon of granulated sugar and let them sit for about 10 minutes. This will help them release some moisture and enhance their flavor.

    Make the Batter: In a large bowl, combine both flours, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
