Ingredients

2 cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

1 cup brown sugar, packed

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon cinnamon

1 cup buttermilk

2 large eggs

2 teaspoons vanilla extract

2 cups apples, peeled and diced (about 2 medium apples)

8 ounces cream cheese, softened

1 tablespoon powdered sugar

½ teaspoon vanilla extract (for the cream cheese filling)

Optional: additional cinnamon and sugar for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

Combine Wet Ingredients: Add the eggs, buttermilk, and vanilla extract to the creamed butter mixture. Mix until well combined.

Add Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing just until incorporated. Be careful not to overmix.

Prepare Apples: Fold the diced apples into the batter until evenly distributed.

Make Cream Cheese Filling: In a small bowl, beat the softened cream cheese with the powdered sugar and ½ teaspoon vanilla extract until smooth and creamy.

Layer the Batter: Pour half of the coffee cake batter into the prepared baking dish and spread it evenly.

Add Cream Cheese Filling: Drop spoonfuls of the cream cheese mixture over the batter. Use a butter knife to gently swirl the filling into the batter.

Top with Remaining Batter: Pour the remaining batter over the cream cheese filling and spread evenly.

Optional Topping: If desired, mix a tablespoon of sugar with a sprinkle of cinnamon and sprinkle it over the top of the batter for added flavor.

Bake: Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Cool and Serve: Remove from the oven and allow to cool for at least 15 minutes before serving.

                            Prep Time: 20 minutes | Total Time: 1 hour | Servings: 12
