Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a 10-inch round angel food cake pan by not greasing it (the batter needs to cling to the sides).

    Beat the Egg Whites: In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until foamy. Add the cream of tartar and salt, then increase the speed to high and whip until soft peaks form (about 3-4 minutes).

      Add Sugar Gradually: With the mixer running, gradually add the granulated sugar, about ¼ cup at a time. Continue mixing until the egg whites form stiff, glossy peaks, which should take another 2-3 minutes.

        Incorporate Flour: Sift the cake flour over the whipped egg whites in three additions, gently folding it in with a spatula after each addition. Be careful not to deflate the batter. Lastly, add the vanilla extract and fold it in gently.

          Bake the Cake: Pour the batter into the prepared angel food cake pan, smoothing the top. Bake for 30-35 minutes or until the cake is golden and springs back when touched lightly.

            Cool Down: Once baked, invert the cake pan onto a wire rack (place the pan upside down to cool completely) for at least 1 hour. This will help maintain the cake's airy structure.

              Cut & Shape the Cake: Once cooled, gently remove the cake from the pan by running a knife around the edges. Cut the cake into bite-sized pieces (about 1x1 inch squares).

                Fry the Bites: Heat oil in a deep pan or fryer to 350°F (175°C). Fry the cake pieces in batches until golden brown for about 1-2 minutes, turning to ensure even cooking.

                  Sugar Coating: Remove the churro bites from the oil and immediately toss them in the cinnamon sugar until well coated.

                    Serve: Arrange the Angel Food Cake Churro Bites on a platter, and serve warm with a side of chocolate sauce for dipping if desired.
