1 pound Andouille sausage, sliced

1 medium onion, diced

3 cloves garlic, minced

2 medium potatoes, peeled and diced

4 cups fresh or frozen corn kernels

4 cups chicken or vegetable broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat.

    Add the sliced Andouille sausage and cook until browned, about 5 minutes.

      Stir in the diced onion and minced garlic, cooking until fragrant and the onion is translucent, about 3-4 minutes.

        Add the diced potatoes and corn kernels, and mix well.

          Pour in the chicken or vegetable broth, bring to a boil, then reduce to a simmer.

            Season with smoked paprika, salt, and pepper. Cover and let simmer for about 15 minutes or until the potatoes are tender.

              Once cooked, stir in the heavy cream and cook for an additional 5 minutes to heat through. Adjust seasoning if needed.

                Remove from heat and serve hot.
