4 cups fresh broccoli florets

1 cup cooked rice (white or brown)

1 cup cheddar cheese, grated

½ cup cream cheese, softened

⅓ cup mayonnaise

½ cup sour cream

½ cup milk

½ cup crushed buttery crackers (like Ritz)

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon cayenne pepper (optional, for a kick)

½ cup diced onion

¼ cup grated Parmesan cheese (for topping)

Instructions
 

Preheat your oven to 350°F (175°C).

    Bring a large pot of salted water to a boil and blanch the broccoli florets for 2 minutes until bright green. Drain and immediately plunge them into ice water to stop the cooking process. Drain again and set aside.

      In a large mixing bowl, combine the cooked rice, grated cheddar cheese, softened cream cheese, mayonnaise, sour cream, and milk. Mix until smooth and well incorporated.

        Add the blanched broccoli, diced onion, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Stir until the broccoli is evenly coated with the creamy mixture.

          Transfer the mixture into a greased 9x13-inch baking dish and spread it out evenly.

            In a separate bowl, mix the crushed crackers and grated Parmesan cheese. Sprinkle this mixture over the top of the broccoli bake.

              Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and bubbly.

                Remove from the oven and let it cool for a few minutes before serving.
