2 ripe bananas, mashed

1 cup almond flour

1/2 cup oats (gluten-free if needed)

1/4 cup honey or maple syrup

2 large eggs

1 teaspoon baking soda

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts or dark chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with muffin liners or grease it lightly.

    In a large mixing bowl, combine the mashed bananas and honey (or maple syrup) until well mixed.

      Add the eggs and vanilla extract to the banana mixture; stir until fully incorporated.

        In another bowl, mix the almond flour, oats, baking soda, cinnamon, and salt. Stir until combined.

          Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the walnuts or dark chocolate chips if you're using them.

            Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

              Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

                Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
