2 cups cooked jasmine rice (preferably day-old)

8 oz shrimp, peeled and deveined

2 tablespoons vegetable oil

1 tablespoon sesame oil

3 cloves garlic, minced

1 small onion, diced

1 cup mixed vegetables (peas, carrots, and corn)

2 large eggs, lightly beaten

4 green onions, sliced (white and green parts separated)

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sriracha (or to taste)

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Lime wedges for serving

Prepare the Ingredients: If using fresh shrimp, season them with a pinch of salt and pepper. Ensure all your vegetables are diced and ready for use.

    Heat the Oils: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the sesame oil for extra flavor.

      Sauté Aromatics: Add the minced garlic and diced onion to the skillet. Stir-fry for about 2 minutes until the onion becomes translucent.

        Cook the Shrimp: Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

          Scramble the Eggs: In the same skillet, push the garlic and onion mixture to the side. Pour in the beaten eggs and scramble them until fully cooked. Once done, mix the cooked eggs with the garlic and onion.

            Add Vegetables: Toss in the mixed vegetables and the white parts of the green onions. Stir-fry for another 2-3 minutes until heated through.

              Combine with Rice: Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir well to combine all ingredients evenly.

                Season the Dish: Pour in the soy sauce, oyster sauce (if using), and sriracha. Mix everything until the rice is evenly coated. Taste and adjust seasoning with salt and pepper as needed.

                  Final Touches: Reintroduce the cooked shrimp back into the skillet. Stir everything together for another minute until the shrimp is heated through.

                    Serve: Remove from heat. Garnish with the green parts of the green onions and fresh cilantro if desired. Serve hot with lime wedges on the side for a refreshing zing.
