2 large sweet potatoes
2 tablespoons olive oil
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
2 cloves garlic, minced
½ cup mayonnaise
1 tablespoon lemon juice
1 teaspoon Dijon mustard
Prepare the Sweet Potatoes: Peel the sweet potatoes and cut them into evenly sized fries, about ¼ inch thick, for consistent cooking.
Season the Fries: In a large bowl, toss the sweet potato fries with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated.
Preheat the Air Fryer: Set your air fryer to 400°F (200°C) and let it preheat for about 5 minutes.
Cook the Fries: Place a single layer of seasoned sweet potato fries in the air fryer basket. Cook for 15-20 minutes, shaking the basket halfway through to ensure even cooking. Fry until they are crispy and golden. Repeat with the remaining fries if necessary.
Make the Garlic Aioli: While the fries are cooking, prepare the garlic aioli. In a small bowl, combine the minced garlic, mayonnaise, lemon juice, and Dijon mustard. Mix well until smooth and creamy. Adjust seasoning to taste.
Serve: Once the sweet potato fries are done, remove them from the air fryer and serve hot. Serve with the garlic aioli on the side for dipping.
