1 cup cooked chicken, shredded

1 cup black beans, rinsed and drained

1 cup corn (frozen or fresh)

1 cup bell peppers, diced (red and green)

½ cup red onion, diced

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

8 large egg roll wrappers

Cooking spray

Optional: Salsa or sour cream for dipping

Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and allow it to preheat for about 5 minutes.

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, black beans, corn, diced bell peppers, and red onion. Add in the chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly coated with the spices.

      Assemble the Egg Rolls: Lay one egg roll wrapper on a clean, flat surface with a corner pointing towards you. Place about 2 tablespoons of the filling mixture in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly while sealing the edges with a little water. Repeat this process for the remaining wrappers and filling.

        Air Fry the Egg Rolls: Lightly spray the egg rolls with cooking spray and place them in a single layer in the air fryer basket. Make sure there is some space between each egg roll for even cooking. You may need to do this in batches depending on your air fryer's size.

          Cook: Air fry the egg rolls for 10-12 minutes, flipping them halfway through, until they are golden brown and crispy.

            Serve: Carefully remove the egg rolls from the air fryer and let them cool slightly. Serve warm with salsa or sour cream for dipping.
